Prepare the Coating:
In another bowl, whisk together the flour, cornmeal, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Heat the Oil:
In a heavy-bottomed pot or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C).
Coat and Fry the Alligator Bites:
Remove the alligator pieces from the buttermilk, letting the excess drip off.Dredge the pieces in the flour mixture, pressing lightly to ensure an even coating.Carefully place the coated alligator bites into the hot oil, frying in batches to avoid overcrowding.Fry until golden brown and crispy, about 3-4 minutes per batch.Use a slotted spoon to transfer the fried bites to a paper towel-lined plate to drain excess oil.
